Arabica beans are typically larger, ovular, and tend to be more oily, which contributes to a smoother mouthfeel during brewing. In contrast, Robusta beans are smaller, rounder, and noticeably less oily. These physical distinctions help determine how the beans roast and extract in the cup, which is especially important for specialty coffee professionals and enthusiasts.

According to Lavazza, Arabica beans are known for their sweet, fruity, and acidic flavor profile, making them a favorite among specialty coffee drinkers. Robusta beans, by comparison, offer a bolder, more bitter flavor with earthy and nutty undertones, and are often considered harsher on the palate. These differences in taste are deeply tied to their chemical composition.

Robusta contains approximately 2.7% caffeine, significantly more than Arabica’s average of 1.5%. This elevated caffeine level helps the Robusta plant resist pests and diseases more effectively, but it also contributes to its more intense and bitter taste. Additionally, Arabica beans contain almost twice the sugar and about 60% more lipids than Robusta. These compounds enhance sweetness, body, and complexity, giving Arabica a smoother, more layered cup profile.

These combined traits explain why Arabica is often considered superior in flavor, while Robusta is valued for its strength, affordability, and practical farming benefits (Lavazza, 2023).

Genetic Differences and Caffeine Content

Beyond the bean’s appearance, Arabica and Robusta coffee differ at the genetic level. Arabica (Coffea arabica) contains 44 chromosomes, while Robusta (Coffea canephora) has 22. This affects not only how the plants grow, but also how the beans taste.

One key distinction is caffeine content. Robusta coffee contains almost twice as much caffeine as Arabica—ranging from 1.7% to 2.5%, compared to Arabica’s 0.8% to 1.4%. The extra caffeine helps protect the Robusta plant from insects and disease, but it also contributes to a more bitter, earthy flavor in the cup.

This explains why Arabica is often described as smoother and more complex, with notes of fruit, flowers, and sugar, while Robusta is stronger and more astringent, often used in espresso blends for its body and crema.
